Sheriff’s office keeps humming over busy Fourth of July
During the July 7 Kaufman County Commissioners’ Court meeting, Sheriff Bryan Beavers gave an update about his office’s activities over the Fourth of July weekend, saying Independence Day is “usually our biggest day of the year.”
Potential fire services within the city limits of Crandall remained a hot-button issue during the most recent city council meeting on Monday, July 6. Mayor David Lindsey and council members heard from Seagoville Fire Chief Todd Gilcrease of the Seagoville Fire Department about potential services for the City of Crandall.

I love the flavor of smoked meat and have for most of my adult life spent countless hours tending a wood fired smoker. I’ve used everything from the old barrel shaped water smokers to homemade iron smokers mounted on a trailer that I pull behind my pickup. There is something special about the smell of hickory, pecan or mesquite wood smoke that gives meat a flavor that has fueled the increase in Barbeque restaurants the past couple decades.
Kaufman County Grand Jury returned 21 indictments July 10. Indictment information obtained from the District Clerk’s office does not include ages or addresses of defendants.

If you are a deer hunter it’s a good bet you can scrounge around in your freezer and find a few packages of overlooked venison steaks, roasts or ground meat. If vacuum sealed or double wrapped with good freezer paper, venison will remain tasty for a couple years but is there a better time than right now to enjoy some tasty venison fajitas, burgers or possibly a tasty venison guisado?
